Creamy Vanilla Matcha Cloud (Luxurious Mocktail)
Silky, lightly sweet, and smooth like a dessert cocktail - but clean and alcohol-free. Think matcha latte meets elevated nightcap.

Ingredients (1 serving)

1 tsp everyday matcha
2 oz warm (not boiling) water
2 oz full-fat coconut milk (or barista oat milk)
1 oz vanilla almond milk (or regular milk)
½–¾ oz maple syrup (to taste)
¼ tsp vanilla extract
Ice
Pinch of sea salt
Optional garnish: whipped coconut cream + light matcha dusting

Instructions

Whisk matcha with warm water until smooth and frothy.
In a shaker, add coconut milk, almond milk, maple syrup, vanilla, salt, and ice.
Shake well until chilled and lightly foamy.
Strain into a chilled coupe or rocks glass.
Slowly pour the matcha over top and gently stir (or leave slightly layered).
Top with a small spoon of whipped coconut cream and dust with matcha.

Elevated Variations

Creamy Pistachio: Add ½ tsp pistachio butter to the shaker.
White Chocolate Matcha: Melt 1 tsp white chocolate into the warm matcha before pouring.
Strawberries & Cream: Add ½ oz strawberry purée for a soft pink swirl.

Protein Glow: Blend instead of shake and add collagen or vanilla protein.

White Chocolate Matcha Blondies

Ingredients (8x8 pan)

½ cup (115g) unsalted butter, melted
¾ cup brown sugar
1 large egg
1 tsp vanilla extract
1 tbsp matcha powder (culinary or ceremonial)
1 cup all-purpose flour
½ tsp baking powder
¼ tsp salt
½–¾ cup white chocolate chips

Instructions

Preheat oven to 350°F (175°C). Line an 8x8 pan with parchment.
Whisk melted butter and brown sugar until glossy.
Add egg and vanilla; mix smooth.
Sift in matcha, flour, baking powder, and salt. Fold gently.
Stir in white chocolate chips.
Spread evenly in pan.
Bake 20–25 minutes — center should be set but slightly soft.
Cool completely before slicing (this keeps them fudgy).

Upgrade Ideas

Swirl in cream cheese before baking.
Add chopped macadamia nuts.
Drizzle melted white chocolate + dust with matcha for a bakery finish.
Sprinkle flaky sea salt on top before baking for contrast.

The Perfect Matcha Recipe

Ingredients (1–2 servings)

1 cup unsweetened almond milk (or any milk)
2 tbsp chia seeds
1 tsp matcha powder
1–2 tsp maple syrup or honey
½ tsp vanilla extract
Tiny pinch of sea salt

Instructions

Whisk the matcha with 2–3 tbsp of the milk until smooth (this prevents clumps).
Stir in the remaining milk, chia seeds, sweetener, vanilla, and salt.
Let sit 5 minutes, then stir again (this keeps it creamy).
Cover and refrigerate at least 2 hours or overnight.
Top and enjoy.
